They analyze every sound picked up until they hear their trigger command phrase, at which point they start processing what comes next. If they don't recognize the command phrase or can't fulfill a request, they'll respond with a generic error message.

A Nest Mini works in a similar way. As soon as you plug it in and set it up, it starts listening for its command phrase. Any sounds it picks up are analyzed by low-power software and hardware. It only tries to interpret the sounds as commands if it hears its command phrase.
